Breakfast Quick Fixes That Are Sanity Savers

Coconut Chia Pudding
Courtney and Stacey Moeslein are the recipe’s creators and the cofounders of the Southern Spoonful in Dallas.
- 1 can coconut milk (13.6 ounces)
- 3 1/2 tablespoons chia seeds
- 1/2 teaspoon vanilla extract
- 1 tablespoon honey
Pour the coconut milk into a medium mixing bowl. Whisk the milk; add the chia seeds, vanilla and honey. Pour the chia seed mixture into 4-ounce containers. Refrigerate for at least 1 hour or overnight.
Peach Baked Oatmeal
This recipe is great to make ahead because it can be portioned and refrigerated or frozen, then microwaved or baked, says Jasmine Golden, who writes the food blog Golden Truffle.
- 1 1/2 cups rolled oats
- 1 teaspoon cinnamon; more for topping
- 1/3 cup brown sugar
- 1 teaspoon baking powder
- 2 cups oat milk
- 1 egg
- 2 peaches or apples (1 1/2 cubed, 1/2 sliced)
- 1/3 cup almonds
- Honey or agave (for topping)
Heat oven to 350°F. In a bowl, mix the oats, cinnamon, brown sugar and baking powder. Mix in the oat milk and the egg. Add 1½ cubed peaches. Mix well; pour the mixture into a baking dish. Top with peach slices and almonds. Bake for 30 minutes. Let the dish rest for 5 minutes. Serve with honey or agave and cinnamon on top.
